Don't think he'll panic, he'd be the sole survivor cuz he'll hitch a ride on the iceberg :)
This is a very complex question.
We need to first make some assumptions:
1) The Eskimo is accustomed to traveling by sea
2) The Eskimo is rich enough to be on the Titanic or is rich to have lived in Europe to travel to the US on the Titanic or was kidnapped by English slave traders and is now trying to go home
3) The Eskimo is called Blip.
Taking these assumptions into consideration, I can say that he will not panic because he does not know that the danger is below and not above. Blip being out of his environment for some time has became distant with his Eskimo heritage, which makes him more naive.
In addition, death by sea for an Eskimo is considered a ritual that transfers them to the after-life, their own version of heaven, or Qilaq in Inuit language, which is full of penguins and whales for him to feast on forever.
No cause he waited for Jack to drown, threw rose off and got on that raft himself.
Then started fishing for good measure.
I loved the posts by purgatory and marzouq. Eskimo Joe will save the titanic as he has been on lookout on deck and already taken action to avoid a collision

Hmm, maybe yeah...
Well...maybe the eskimo is more in tune with nature i.e. an approaching iceberg is a good thing? Or that he/she doesn't panic because he/she knows what's coming...so my best bet that he/she will grab a drink and settle down somewhere quiet and away from the raucous and enjoy the live version of the "Titanic"

Well, Eskimos...or rather, Inuits, have several words for snow. One of those words is "iceberg." I think they have their bases covered. So: Yes.
